Feisty Lime Pork Green Chili
Feisty Lime Pork Green Chili is a vibrant and flavorful dish that combines tender, slow-cooked pork with a zesty blend of Hatch green chiles, spices, and a tangy hint of lime. - 1 Dutch Over or Soup Pot
Ingredients
- 3 lbs Pork Loin
- 2 tbsp Willow Seasonings Feisty Lime Seasoning
- 1/2 cup All Purpose Flour (you can add more flour if you want your chili thicker)
- 12 cups Water
- 4 16 ounce cans of Pinto Beans – Drained
- 6 Medium Potatoes – Cubed
- 8 tsp Dry Knorr Chicken Bullion
- 2 tbsp Extra Virgin Olive Oil
- 15-20 each Hatch Green Chili Peppers
Instructions
- Cut pork into bite size pieces, place in a bowl and season with the Willow Seasonings & Blends Feisty Lime Seasoning. Cover and place in the refrigerator for at least 2 hours (preferably overnight).
- Peel potatoes and dice into bite sized chunks and set aside.
- Drain pinto beans and set aside.
- Remove skins from Hatch green chilis (you can remove some of the seeds to reduce heat level) and chop up. Set aside.
- Heat olive oil in Dutch oven or soup pot over medium heat.
- Place cut up seasoned pork into the pot and brown on all sides.
- Once the pork is browned on all sides, add flour and chicken bouillon to the pot and mix well to coat all of the pork with the mixture.
- Add the water to the pot and bring to a slow boil for 3 minutes.
- Add your Hatch green chilis, beans, and potatoes to the pot, bring to a boil and then reduce heat and simmer until pork is tender.
